A delicious and easy recipe for crispy zucchini fritters made with turkey bacon.

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 cup shredded turkey bacon
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • Oil for frying

Instructions

  1. Grate the zucchini and drain excess moisture.
  2. In a bowl, combine zucchini, flour, egg, bacon, Parmesan, garlic powder, salt, pepper, and parsley.
  3. Heat oil in a skillet over medium heat.
  4. Form mixture into patties and fry until golden brown on both sides.
  5. Remove from pan and drain on paper towels.

Notes

  • For extra crunch, add more flour if necessary.
  • Serve hot with dipping sauce of choice.
