  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Brown the beef pieces on all sides.
  2. Transfer the beef to the crockpot and add the carrots, potatoes, onion, and garlic.
  3. In a bowl, mix the beef broth, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
  4. Pour the mixture over the beef and vegetables in the crockpot.
  5. Cover and cook on low for 8 hours or high for 4 hours.

  • For a thicker stew, mix 2 tablespoons of cornstarch with water and stir into the stew during the last hour of cooking.
