1 cup unsalted butter, softened
1 cup brown sugar, packed
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup white chocolate chips
1 cup dried cranberries
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla.
Combine the oats, flour, baking soda, and salt; stir into the creamed mixture until just blended.
Fold in the white chocolate chips and cranberries.
Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, until the edges are golden.
Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For chewier cookies, do not overbake.
You can substitute the cranberries with raisins if desired.
