White Chicken Chili Recipe

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup heavy cream
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, sauté the onion, garlic, and bell pepper until soft.
  2. Add the cooked chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in the heavy cream and cilantro, cooking for an additional 5 minutes.
  5. Serve hot and enjoy!

Notes

  • You can adjust the spice level by adding more or less chili powder.
  • For a lighter version, substitute heavy cream with Greek yogurt.
