White Cake With Berry-Italian Meringue Buttercream Frosting

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1 cup milk
  • 4 large egg whites
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mixed berries
  • 1 1/2 cups Italian meringue buttercream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg whites and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk.
  6. Fold in the mixed berries.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool completely before frosting with Italian meringue buttercream.

Notes

  • For a more intense berry flavor, puree some of the mixed berries and add them to the buttercream.
  • Make sure to whip the meringue to stiff peaks for a light and airy frosting.
