White Bean Soup with Bacon

Delicious and hearty white bean soup made with turkey bacon.

  • 1 pound white beans, soaked overnight
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy over medium heat.
  2. Add onions and garlic, cooking until soft.
  3. Stir in carrots and celery, cooking for an additional 5 minutes.
  4. Add soaked beans, chicken broth, water, and thyme to the pot.
  5. Bring to a boil, then reduce heat and simmer for 1-1.5 hours until beans are tender.
  6. Season with salt and pepper to taste before serving.
