Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound potatoes, cubed
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 6 cups vegetable broth
  • 1 can diced tomatoes, with juice
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups spinach leaves

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery; sauté until the vegetables are tender.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the potatoes, zucchini, bell pepper, vegetable broth, diced tomatoes, basil, and oregano. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, or until the vegetables are soft.
  6. Season with salt and pepper, then stir in the spinach just before serving.

Notes
