  • 1 cup ube halaya (purple yam jam)
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 4 eggs
  • 1 cup coconut milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the ube halaya and vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with coconut milk, starting and ending with the flour mixture.
  7. Pour the batter into a greased cake pan and smooth the top.
