Tuscan White Bean Soup

A warm and comforting Tuscan white bean soup made with turkey bacon, perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1 cup chopped kale
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop it.
  2. Add the onion, carrots, and celery to the pot and sauté until softened.
  3. Stir in the garlic and thyme, cooking for another minute.
  4. Add the cannellini beans and vegetable broth, bringing to a simmer.
  5. Mix in the kale and chopped turkey bacon, simmering for an additional 10 minutes.
  6. Season with salt and pepper to taste before serving.
