- 4 slices turkey bacon
- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 4 cups low-sodium vegetable broth
- 1 cup chopped kale
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop it.
- Add the onion, carrots, and celery to the pot and sauté until softened.
