A delightful and savory spinach casserole recipe that has become a family favorite, perfect for gatherings and weeknight dinners.

  • 1 pound fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 3 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups crushed crackers
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine spinach, ricotta, sour cream, Parmesan, eggs, salt, pepper, and garlic powder.
  3. In another bowl, mix crushed crackers and melted butter until well combined.
  4. Layer half of the cracker mixture in a greased baking dish.
  5. Spread the spinach mixture over the cracker layer.
  6. Top with the remaining cracker mixture.
  7. Bake for 30-35 minutes or until heated through and golden brown.

Notes

  • For a creamier texture, add an extra cup of ricotta.
  • Can be prepared a day in advance and baked before serving.
