Ingredients

  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, cook the turkey bacon until crispy.
  2. Add onions and garlic to the skillet and sauté until translucent.
  3. Stir in the rice and cook for 2 minutes until lightly toasted.
  4. Add diced tomatoes, chicken broth, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  6. Remove from heat and let it sit for an additional 5 minutes before serving.
