  • 1/4 cup fresh cilantro
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and slice the cucumbers, red bell pepper, and cherry tomatoes.
  2. Chop the red onion and cilantro.
  3. In a bowl, mix rice vinegar, sugar, salt, and black pepper until dissolved.
  4. Add all the chopped vegetables to the bowl and mix well.
  5. Let it marinate for at least 15 minutes before serving.

Notes
