Sweet Potato and avocado Taco Bowl

A delicious and nutritious taco bowl featuring sweet potatoes and avocados.

Ingredients

  • 2 sweet potatoes
  • 1 avocado
  • 1 cup black beans
  • 1 lime
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, cumin, and salt.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.
  4. While the sweet potatoes are roasting, prepare the black beans and slice the avocado.
  5. Once the sweet potatoes are done, assemble the taco bowl: layer sweet potatoes, black beans, and avocado.
  6. Squeeze lime juice over the top and garnish with fresh cilantro.
