Stuffed Pepper Soup

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 1 cup cooked rice
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add onion, green and red bell peppers, and garlic. Sauté until vegetables are tender.
  3. Stir in diced tomatoes, beef broth, cooked rice, and Italian seasoning.
  4. Bring to a boil, reduce heat, and simmer for 30 minutes.
  5. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a vegetarian version, substitute beef with lentils or tempeh.
