  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup milk
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for strawberries)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the flour, baking powder, salt, and granulated sugar.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined.
  5. Drop spoonfuls onto a baking sheet and bake for 15-20 minutes.
  6. While the shortcakes cool, mix strawberries with sugar and let them macerate.
  7. Whip the cream with powdered sugar until soft peaks form.
  8. Assemble by splitting shortcakes, adding strawberries, and topping with whipped cream.

Notes

  • For best flavor, use fresh, ripe strawberries.
  • Shortcakes can be made ahead of time and stored in an airtight container.
