- 1 pound flank steak
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Preheat grill to medium-high heat.
- In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Rub the mixture all over the flank steak.
- Grill the steak for 5-7 minutes on each side or until your desired doneness.
- Remove the steak from the grill and allow it to rest for 5 minutes before slicing.
- In a serving bowl, layer quinoa, cherry tomatoes, cucumber, feta cheese, and parsley.
