  • 1 pound flank steak
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Rub the mixture all over the flank steak.
  3. Grill the steak for 5-7 minutes on each side or until your desired doneness.
  4. Remove the steak from the grill and allow it to rest for 5 minutes before slicing.
  5. In a serving bowl, layer quinoa, cherry tomatoes, cucumber, feta cheese, and parsley.
  6. Slice the steak and place it on top of the quinoa mixture.
  7. Squeeze fresh lemon juice over the bowl before serving.
