- 1 cup Arborio rice
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt to taste
- Black pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until translucent.
- Add the Arborio rice and stir for 1-2 minutes until the rice is coated with oil.
- Pour in the vegetable broth, one cup at a time, stirring continuously until absorbed before adding the next cup.
- When the rice is creamy and al dente, stir in the fresh spinach until wilted.
- Remove from heat and mix in the Parmesan cheese and butter. Season with salt and pepper to taste.
- Serve hot and enjoy!
