Spinach Risotto with Parmesan

A creamy and comforting spinach risotto that’s easy to make and deliciously satisfying.

Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until translucent.
  2. Add the Arborio rice and stir for 1-2 minutes until the rice is coated with oil.
  3. Pour in the vegetable broth, one cup at a time, stirring continuously until absorbed before adding the next cup.
  4. When the rice is creamy and al dente, stir in the fresh spinach until wilted.
  5. Remove from heat and mix in the Parmesan cheese and butter. Season with salt and pepper to taste.
  6. Serve hot and enjoy!

Notes

  • For additional flavor, consider adding mushrooms or herbs.
  • This risotto pairs well with a side salad.
