Spaghetti Squash with Turkey Meatballs

  • 1 medium spaghetti squash
  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and remove the seeds. Place cut-side down on a baking sheet and roast for 30-45 minutes, or until tender.
  3. In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  4. Form the mixture into meatballs and place them on a baking sheet.
  5. Bake meatballs for 20-25 minutes or until cooked through.
  6. While the meatballs are baking, heat marinara sauce in a saucepan.
  7. Once the spaghetti squash is cooked, use a fork to scrape the strands into a bowl.
  8. Serve the spaghetti squash topped with meatballs and marinara sauce.

Notes

  • For added flavor, you can include chopped fresh herbs in the meatball mixture.
