Smothered Green Beans and Potatoes-Cajun Style

  • 1 pound green beans, trimmed
  • 2 cups potatoes, peeled and diced
  • 4 slices turkey bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, cooking until softened.
  3. Add potatoes and chicken broth, bringing to a boil.
  4. Stir in green beans and Cajun seasoning, then reduce heat to low.
  5. Cover and simmer for 25-30 minutes or until potatoes are tender.
  6. Return bacon to the pot, season with salt and pepper, and cook for an additional 5 minutes.

Notes

  • For a spicier version, increase the amount of Cajun seasoning.
  • This dish pairs well with cornbread.
