Slow Cooker Welsh Lamb Hotpot

A comforting and easy recipe for Welsh lamb hotpot made in a slow cooker.

Ingredients

  • 2 pounds lamb shoulder, diced
  • 4 large potatoes, sliced
  • 3 carrots, sliced
  • 1 large onion, chopped
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a slow cooker, place the diced lamb, onions, and carrots.
  2. Top with sliced potatoes.
  3. Pour in beef broth and Worcestershire sauce, then add thyme, salt, and pepper.
  4. Cover and cook on low for 7-8 hours or until the lamb is tender.
  5. Serve hot and enjoy!

Notes

  • For a thicker stew, add a little cornstarch mixed with water towards the end of cooking.
