Slow Cooker Lasagna Soup

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 9 lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a skillet, brown the ground beef and Italian sausage over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and garlic to the skillet, cooking until the onion is translucent.
  3. Transfer the meat mixture to the slow cooker. Stir in the crushed tomatoes, beef broth, lasagna noodles, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, stir in the ricotta cheese and half of the mozzarella cheese until melted and combined.
  6. Serve hot, topped with remaining mozzarella and Parmesan cheese.

Notes

  • For a vegetarian option, substitute ground beef and sausage with lentils or mushrooms.
  • Add spinach or kale for extra nutrition.
