Slow Cooker Chicken Stew Recipe

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 3 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add chicken broth, carrots, potatoes, onion, and garlic on top.
  3. Sprinkle thyme, salt, and pepper over the ingredients.
  4. Cover and cook on low for 6-8 hours or until chicken is tender.
  5. Remove chicken, shred it, and return it to the stew.
  6. Serve hot.

  • For a thicker stew, use cornstarch to thicken at the end.
