Slow Cooker Chicken Enchiladas

Slow Cooker Chicken Enchiladas are a delicious and easy meal that will please the whole family.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 cup black beans
  • 1/2 cup diced onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. In a large bowl, combine the chicken, black beans, onions, cumin, and chili powder.
  2. Spread a thin layer of enchilada sauce on the bottom of the slow cooker.
  3. Fill each tortilla with the chicken mixture and roll tightly.
  4. Place the filled tortillas seam-side down in the slow cooker.
  5. Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
  6. Cover and cook on low for 4-6 hours, or until heated through.
  7. Serve warm and enjoy!

Notes

  • For a spicier kick, add jalapeños to the chicken mixture.
  • Serve with sour cream and guacamole for extra flavor.
