  • 2 pounds chicken thighs
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can coconut milk
  • 1 cup tomato sauce
  • 3 tablespoons butter
  • 2 tablespoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • salt to taste
  • 1 cup cilantro, for garnish

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the chopped onions, garlic, ginger, coconut milk, tomato sauce, butter, and spices.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken using two forks and stir back into the sauce.
  6. Serve over rice or with naan, garnished with cilantro.

  • For a spicier dish, add more chili powder.
