Simple Cottage Cheese Oatmeal Blender Muffins

  • 2 cups rolled oats
  • 1/2 cup honey
  • 2 eggs

  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a blender, combine cottage cheese, oats, honey, eggs, baking powder, salt, and vanilla extract until smooth.
  3. Stir in chopped nuts if desired.
  4. Pour the batter into prepared muffin tin, filling each cup about two-thirds full.
  5. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
