Shredded Mexican Chicken Casserole

A delicious and easy-to-make Mexican chicken casserole that the whole family will love.

  • 2 cups shredded cooked chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 teaspoon taco seasoning
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until soft.
  3. Add shredded chicken, black beans, corn, salsa, and taco seasoning. Stir to combine and heat through.
  4. Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
  5. Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  6. Allow to cool slightly before serving.

Notes

  • For extra flavor, add jalapeños to the mixture.
  • This casserole can be served with tortilla chips.
