  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add the mixed vegetables and cook for another 5 minutes.
  4. Stir in the diced tomatoes, beef broth, garlic powder, onion powder, oregano, salt, and pepper.
  5. Combine the mixture with the cooked rice.
  6. Transfer to a baking dish and cover with aluminum foil.
  7. Bake for 30 minutes, then uncover and bake for another 10-15 minutes.
