Saucy Beef and Vegetable Casserole

  • 2 cups mixed vegetables (carrots, peas, and corn)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups cooked pasta
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until no longer pink. Drain the excess fat.
  3. Add the mixed vegetables, diced tomatoes, beef broth, Worcestershire sauce, garlic powder, and onion powder. Stir to combine.
  4. Bring the mixture to a simmer and cook for about 10 minutes.
  5. Stir in the cooked pasta and half of the cheese. Mix well.
  6. Transfer the mixture to a baking dish and top with the remaining cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

Notes

  • This casserole can be made ahead of time and refrigerated before baking.
