  • 1 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon red gel food coloring
  • 1/2 cup butter, softened
  • 2 cups powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 cup heavy cream (for filling)
  • small candies (for decoration)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together the almond flour and powdered sugar.
  3. In a separate mixing bowl, whisk the egg whites until frothy, then gradually add granulated sugar, whisking until stiff peaks form.
  4. Add vanilla and red gel food coloring, mixing until well combined.
  5. Gently fold the dry ingredients into the egg white mixture until combined.
  6. Spoon the batter into a piping bag and pipe circles onto the prepared baking sheet.
  7. Let the macarons sit for 30 minutes until a skin forms on the surface.
  8. Bake for 15-20 minutes or until the macarons easily lift off the parchment.
  9. While the macarons cool, prepare the filling by mixing the softened butter, powdered sugar, vanilla extract, and heavy cream until smooth.
  10. Once completely cool, pipe filling onto the flat side of half the macarons and sandwich with the other half.
  11. Decorate with small candies to create Santa faces.

Notes

  • Make sure to age your egg whites for best results.
  • Do not overmix the batter; it should flow like lava.
