- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a bowl, sift together the almond flour and powdered sugar.
- In a separate mixing bowl, whisk the egg whites until frothy, then gradually add granulated sugar, whisking until stiff peaks form.
- Add vanilla and red gel food coloring, mixing until well combined.
- Gently fold the dry ingredients into the egg white mixture until combined.
- Spoon the batter into a piping bag and pipe circles onto the prepared baking sheet.
- Let the macarons sit for 30 minutes until a skin forms on the surface.
- Bake for 15-20 minutes or until the macarons easily lift off the parchment.
- While the macarons cool, prepare the filling by mixing the softened butter, powdered sugar, vanilla extract, and heavy cream until smooth.
- Once completely cool, pipe filling onto the flat side of half the macarons and sandwich with the other half.
