  • 4 chicken thighs
  • 1 pound asparagus
  • 2 cups arugula
  • 1/2 cup walnuts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper and place them in a baking dish.
  3. Trim the asparagus and add to the dish with olive oil.
  4. Roast for 30-35 minutes until the chicken is cooked through.
  5. In a bowl, mix the arugula, walnuts, and lemon juice.
  6. Serve the roasted chicken thighs over the asparagus with the arugula salad on the side.

Notes

  • Make sure the chicken is thoroughly cooked before serving.
  • You can substitute almonds for walnuts if preferred.
