  • 1 pound Italian sausage
  • 2 cups diced tomatoes
  • 1 medium zucchini, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned.
  3. Add the garlic and cook for another minute until fragrant.
  4. Stir in the diced tomatoes and zucchini, and season with oregano, salt, and pepper. Cook until the vegetables are tender.
  5. Add the cooked rigatoni to the skillet and toss to combine. Serve hot.
