  • 12 ounces rigatoni
  • 1 pound Italian sausage
  • 2 cups diced tomatoes
  • 1 medium zucchini, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • salt, to taste
  • black pepper, to taste
  • fresh basil, for garnish

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned.
  3. Add garlic and zucchini, cooking until the zucchini is tender.
  4. Stir in diced tomatoes and let simmer for about 5 minutes.
  5. Add the cooked rigatoni to the skillet and toss to combine. Season with salt and pepper.
  6. Serve hot, garnished with fresh basil.
