  • 2 pounds red potatoes
  • 1 pound blue potatoes
  • 1 cup diced celery
  • 1 cup cherry tomatoes, halved
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and chop the red and blue potatoes into bite-sized pieces.
  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
  3. Drain and let them cool.
  4. In a large bowl, combine the cooled potatoes, celery, and cherry tomatoes.
  5. In a separate bowl, mix together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the potato mixture and toss to combine.
  7. Chill in the refrigerator for at least an hour before serving.
