- 1 ½ cups granulated sugar
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon white vinegar
- 1 teaspoon salt
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- ½ cup butter, softened
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix together the flour, sugar, baking soda, and salt.
- In another bowl, combine the oil, buttermilk, eggs, vanilla, and red food coloring.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Add the vinegar and mix for a few more seconds.
- Divide the batter evenly between the prepared pans.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
- For the frosting, beat together the cream cheese, butter, and powdered sugar until smooth.
- Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides.
