- 1 cup quinoa
- 2 cups water
- 2 apples, diced
- 1/2 cup walnuts, chopped
- 1/4 cup raisins
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Rinse quinoa under cold water.
- In a saucepan, combine quinoa and water, bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine diced apples, walnuts, raisins, and parsley.
- Add cooled quinoa to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Pour dressing over salad and mix well.
- Serve immediately or chill before serving.
