Quinoa Apple Salad

A refreshing and nutritious salad that combines the wholesome goodness of quinoa with the crisp sweetness of apples!

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 apples, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup raisins
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. In a saucepan, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine diced apples, walnuts, raisins, and parsley.
  6. Add cooled quinoa to the bowl.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  8. Pour dressing over salad and mix well.
  9. Serve immediately or chill before serving.

Notes

  • For a vegan option, omit honey or use a plant-based sweetener.
  • This salad can be made ahead of time and stored in the refrigerator.
