1/2 cup brown sugar
1 cup pumpkin puree
1/2 cup buttermilk
1/2 cup brewed coffee
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a separate large bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, buttermilk, coffee, vegetable oil, eggs, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients and stir until just combined.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
