  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs

  • 1 cup cream cheese, softened
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the sugars and oil. Add the eggs, pumpkin puree, and vanilla. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the cream cheese and caramel sauce together until smooth and creamy.
  8. Once the cakes are fully cooled, spread frosting between the layers and on top of the cake.
  9. Drizzle additional caramel sauce over the top for decoration before serving.
