  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mix the pumpkin puree, sugars, and vegetable oil until well combined.
  3. Add the eggs and vanilla extract, and mix until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture and mix until just combined.
  6. Fill cupcake liners about 2/3 full with the batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool completely before frosting.
  9. For the frosting, beat together cream cheese and powdered sugar until creamy and smooth, then frost the cooled cupcakes.
