Old Fashioned Vegetable Beef Soup

  • 1 pound beef stew meat
  • 3 cups beef broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the onions and garlic, and sauté until soft.
  3. Pour in the beef broth and bring to a boil.
  4. Add potatoes, mixed vegetables, tomatoes, thyme, salt, and pepper.
  5. Reduce heat and simmer for about 1 hour, or until the meat is tender.
  6. Adjust seasoning to taste and serve warm.
