- 2 pounds beef chuck, cut into 1-inch pieces
- 1/4 cup all-purpose flour
- 2 tablespoons vegetable oil
- 4 cups beef stock
- 3 cups potatoes, peeled and diced
- 2 cups carrots, sliced
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- In a large bowl, toss the beef pieces with flour until evenly coated.
- In a large pot, heat the vegetable oil over medium-high heat. Add the beef and brown on all sides.
- Add the chopped onions and garlic, and sauté until the onions are translucent.
- Pour in beef stock and bring to a boil. Stir in thyme and bay leaf.
- Add potatoes and carrots, reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaf and serve hot.
Notes
- For a thicker stew, you can mix a bit of cornstarch with cold water and add it in during the last 15 minutes of cooking.
- Feel free to add any other vegetables you enjoy, such as peas or green beans.
