Mexican Street Corn Quinoa

This Mexican Street Corn Quinoa is a deliciously healthy dish that combines the flavors of traditional Mexican street corn with wholesome quinoa. It’s easy to make and perfect as a side or main meal.

  • 1 cup quinoa
  • 2 cups water
  • 1 cup corn, grilled or canned
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. Rinse the quinoa under cold water; drain and set aside.
  2. In a medium saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover and simmer for about 15 minutes until the quinoa is cooked through.
  4. In a large bowl, mix together the corn, cotija cheese, mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Add the cooked quinoa and cilantro to the bowl; mix well to combine all ingredients.
  6. Serve warm or at room temperature.

Notes

  • For a vegan version, substitute mayo with a vegan alternative and omit cheese.
  • Feel free to add diced tomatoes or avocado for extra flavor!
