- 1 cup quinoa
- 2 cups water
- 1 cup corn, grilled or canned
- 1/2 cup cotija cheese, crumbled
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup cilantro, chopped
- Rinse the quinoa under cold water; drain and set aside.
- In a medium saucepan, combine quinoa and water; bring to a boil.
- Reduce heat, cover and simmer for about 15 minutes until the quinoa is cooked through.
- In a large bowl, mix together the corn, cotija cheese, mayonnaise, lime juice, chili powder, salt, and pepper.
- Add the cooked quinoa and cilantro to the bowl; mix well to combine all ingredients.
- Serve warm or at room temperature.
Notes
- For a vegan version, substitute mayo with a vegan alternative and omit cheese.
- Feel free to add diced tomatoes or avocado for extra flavor!
