Mediterranean Quinoa Salad

A delicious and nutritious Mediterranean quinoa salad packed with flavor and perfect for any occasion.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1 cup bell peppers, diced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring water to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell peppers, feta cheese, and parsley.
  5. Add the cooled quinoa to the vegetables.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve immediately or refrigerate for later.

Notes

  • Feel free to add or substitute any vegetables you prefer.
  • For a vegan option, omit the feta cheese.
