Loaded Potato Soup

A creamy and hearty loaded potato soup topped with turkey bacon and chicken ham, perfect for a cozy meal.

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, diced
  • 1 cup chicken ham, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped

Instructions

  1. Peel and dice the potatoes, then set aside.
  2. In a large pot, cook the turkey bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  3. Add the onions to the pot and sauté until translucent.
  4. Add the diced potatoes and chicken ham to the pot, then pour in the chicken broth.
  5. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  6. Add the heavy cream, garlic powder, salt, and black pepper to the pot, stirring to combine.
  7. Use an immersion blender to blend until desired consistency is reached.
  8. Top with shredded cheese and green onions before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • Adjust seasonings to taste.
