Ingredients

  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 package (3 oz) lemon gelatin
  • 1 cup boiling water
  • 1 cup sweetened condensed milk
  • 1 cup whipped topping
  • 1 lemon, zested and juiced

Instructions

  1. Preheat oven according to cake mix instructions.
  2. Prepare the lemon cake mix according to package directions.
  3. Pour the batter into a greased pan and bake as directed.
  4. While the cake is baking, mix the lemon gelatin with boiling water until dissolved.
  5. Once the cake is done, remove from the oven and poke holes throughout the cake with a fork.
  6. Pour the lemon gelatin evenly over the cake, allowing it to soak in.
  7. Mix the sweetened condensed milk with lemon juice and pour it over the cake.
  8. Chill the cake for at least 2 hours.
  9. Top with whipped topping and lemon zest before serving.

Notes

  • For a more intense lemon flavor, add extra lemon zest.
  • This cake can be made a day in advance for best results.
