Lemon Blueberry Streusel Muffins

Delicious lemon blueberry streusel muffins that are perfect for breakfast or a snack.

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the melted butter, eggs, milk, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and gently fold in the blueberries.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.

Notes

  • Store muffins in an airtight container for up to 3 days.
  • For added flavor, sprinkle extra lemon zest on top before baking.
