Lemon and Poppyseed Cottage Cheesecakes

Ingredients

  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine cottage cheese, sugar, eggs, lemon juice, lemon zest, poppy seeds, vanilla extract, and salt. Blend until smooth.
  3. Pour the mixture into greased ramekins.
  4. Bake for 25-30 minutes or until set.
