Kale Quinoa and Chickpea Salad with Lemon Vinaigrette

Ingredients

  • 2 cups kale, chopped
  • 1 cup quinoa, rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine the kale, cooked quinoa, chickpeas, cherry tomatoes, red onion, and feta cheese.
  3. In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.
