Instant Pot Spanish Rice

This Instant Pot Spanish Rice is a quick and easy dish that is full of flavor and perfect for the whole family.

  • 2 cups long-grain rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup bell pepper, chopped
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Set the Instant Pot to sauté mode and heat olive oil.
  3. Add onion and garlic, sautéing until fragrant.
  4. Stir in paprika and cumin.
  5. Add the rinsed rice and stir to coat.
  6. Pour in the diced tomatoes and vegetable broth.
  7. Add bell pepper, peas, salt, and black pepper.
  8. Close the lid and seal the vent. Cook on high pressure for 6 minutes.
  9. Allow the pot to naturally release for 10 minutes, then perform a quick release for any remaining pressure.
  10. Fluff the rice with a fork and serve.

Notes

  • You can add protein such as chicken or shrimp for a more filling meal.
