- 2 cups long-grain rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup bell pepper, chopped
- 1 cup frozen peas
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Rinse the rice under cold water until the water runs clear.
- Set the Instant Pot to sauté mode and heat olive oil.
- Add onion and garlic, sautéing until fragrant.
- Stir in paprika and cumin.
- Add the rinsed rice and stir to coat.
- Pour in the diced tomatoes and vegetable broth.
- Add bell pepper, peas, salt, and black pepper.
- Close the lid and seal the vent. Cook on high pressure for 6 minutes.
- Allow the pot to naturally release for 10 minutes, then perform a quick release for any remaining pressure.
- Fluff the rice with a fork and serve.
