Instant Pot Copycat Panera Corn Chowder

A delicious and easy-to-make corn chowder that mimics the flavors of Panera’s recipe, featuring turkey bacon for a twist.

Ingredients

  • 4 cups corn kernels, fresh or frozen
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup cream
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and cook the turkey bacon until crispy. Remove and set aside.
  2. Add onion and garlic to the pot, cooking until softened.
  3. Stir in corn, potatoes, chicken broth, thyme, and paprika.
  4. Seal the lid and cook on high pressure for 8 minutes.
  5. Quick release the pressure and stir in cream.
  6. Serve topped with crumbled turkey bacon.

Notes

  • For a thicker chowder, blend a portion of the soup before adding the cream.
  • Feel free to add additional vegetables like bell peppers or carrots.
