Instant Pot Chinese Imperial Palace Egg Drop Soup

Ingredients

  • 4 cups chicken broth
  • 2 large eggs
  • 1 teaspoon cornstarch
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 green onions, chopped
  • 1 cup frozen peas

Instructions

  1. Pour the chicken broth into the Instant Pot.
  2. Make a cornstarch slurry by mixing cornstarch with a little water, then add to the pot.
  3. Press the ‘Soup’ button and set the time for 10 minutes.
  4. Once done, beat the eggs and slowly drizzle them into the pot, stirring gently.
  5. Stir in soy sauce, sesame oil, and white pepper.
  6. Garnish with green onions and peas before serving.

Notes

  • For extra flavor, use homemade chicken broth.
  • Adjust the thickness of the soup by adding more or less cornstarch.
